Cornish Game Hen with Homemade Cranberry Sauce

We had a very small Thanksgiving with just 3 people this year
so instead of ordering and cooking a huge turkey,
we had all settled on Cornish Game Hen
with the traditional sides.
(and Julian Dutch Apple Pie for dessert yum)

My wonderful husband took to the oven and
made us each our own beautiful & delicious little hen.

Ingredients:
1 Cornish game hen per person
fresh bunches of rosemary
orange, sliced
butter, butter, butter
salt and pepper


Directions:
- thoroughly rinse game hens with water and pat dry with paper towel
- rub on some salt and a little pepper
- wrap each game hen individually in foil
place in bowl, and let sit in refrigerator overnight
 
- Preheat oven to 375 F
- give the game hens a good once over with butter
and salt and pepper to taste
-squeeze a few sprigs of rosemary through the skin
on the top side of each hen
- place orange slices on top and next to each hen
- place in over and bake for about 45 minutes - 1 hour
*make sure the inside is completely cooked before serving!


Homemade Cranberry Sauce
Ingredients:
1 can of frozen apple concentrate
1 1/2 bag frozen or fresh cranberries
1 orange, peeled and chopped


Directions:

- in a saucepan or small pot, add cranberries
and apple concentrate
- boil until the concentrate is reduced and
begins to gel
- mash sauce so the cranberries are well incorporated
- stir in oranges pieces
- cool in refrigerator overnight
