Veggie Mac & Cheese

My husband made us a delicious & (mostly) healthy 
mac and cheese dinner.

You can customize the ingredients to your liking,
but I will admit, this was a stellar combination!

Ingredients:

2 packages of fusilli pasta
1 package of quattro fromaggio cheese blend
1 jar of Alfredo sauce
1 cup broccoli chopped
1 cup asparagus chopped
2 red bell peppers cut into thing strips
1 package of turkey bacon (nitrate free)
Panko breadcrumbs

Directions:

- preheat oven to 350
- cook pasta according to package directions
- cook vegetables in a skillet until just done (do not over cook)
- cut the turkey bacon into little cubes and cook until crispy
- when the pasta is ready, while still in the pot, 
stir in Alfredo sauce, veggies, 
bacon, and half the bag of cheese.
- pour mixture into an oven safe dish
(it fits perfectly in a 9x13 cake pan)
- cover the top with the rest of the cheese
-  sprinkle breadcrumbs on top of cheese
- place in over and bake for about 15 minutes
or until cheese is melted and breadcrumbs are toasted

serve warm!
